Scrambled eggs with spinach

It's recipe day! And on this occasion I want to share with you a dish that is very easy to prepare, but no less nutritious. On the contrary! Because it brings together a variety of food groups such as vegetables, animal products, oils (and even cereals), this preparation will provide you with a considerable amount of nutrients.



Ingredients

  • Olive oil - oils

  • 30 g raw spinach(about a cup) - vegetables

  • 40 g raw onion (a little more than a cup) - vegetables

  • 2 slices of red pepper (approximately 7 cm in diameter and 4 cm thick) - vegetable

  • 2 pieces of chicken egg - food of animal origin

  • Salt and pepper to taste

 

Preparation mode

  1. Heat the olive oil in a frying pan over medium heat.

  2. Clean the spinach and place it in the pan while it is still wet. Cook them over medium heat, and season them with salt and pepper.

  3. Once the spinach has softened, add the onion and bell pepper. Cook until the onions are transparent and the pepper pieces are soft.

  4. Add the eggs and stir until cooked.

  5. Season with salt and pepper.

**Note: if you want to add a serving of cereal, you can choosefor a couple of corn tortillas or two pieces of whole wheat bread.
